Thomas Hill Organics Paso Robles, a bistro and wine bar, offers a rotating menu showcasing locally grown, farm-fresh ingredients paired with regional wines. Making a dinner reservation is easy and highly recommended through the Yelp reservation system used for online orders before visiting this fine downtown establishment. This bistro is very popular on Friday and Saturday nights, so making a dinner reservation is highly recommended to avoid a long wait and secure a good table. Their website, ironically, omits their fantastic wine menu. Unable to view their online wine list when making a reservation, I opted to bring my own bottle of wine for a $25 corkage fee, Barton 2021 Moondance. Their wine menu, which I viewed at my table, featured excellent estate wines. Niner, Hearst, Austin Hope, and Barton Family wines were among the many wines featured on the menu. To start, I enjoyed my Barton’s wine with Crab Cakes and a citrus dressing. Herb & cheese biscuits, as a side order, were unavailable after 7PM. Be at the restaurant by 5PM to try their incredible herb & cheese biscuits. Instead, my choice was their various breads and lovely olive oils. Crab cakes and wine were enhanced by the bread and olive oil. Next, I focused on a traditional Mexican dinner dish known as Chile Nogada. This incredible meal and wine pairing exceeded my expectations. Poblano peppers filled with picadillo (peppers, onions, olives, pears, and raisins), topped with nogada sauce (walnut cream), steak and shrimp, make up this dish. The food and wine were divine, and Allie, my wonderful server, along with the other guests, hostess, bartenders, and chefs, made me feel incredibly welcome throughout my entire meal. Thank you team!

We heard such good things about the restaurant, we were excited to try it out. Sadly our evening fell flat.
To state the good, the outdoor back patio is cozy and heated and the food WAS great. The tomato soup of the day, the crab cakes (two large ones), and the chicken dish (farro, mushroom jus, and kale) were spot on. And I never order chicken out so that’s saying a lot.
HOWEVER, thing after thing came up throughout the night and just tainted the overall meal.
- The service: for the duration of our meal our finished wine glasses and empty beer bottle were left on the table.
- Attention to detail: we were celebrating a birthday and saw other tables with candles, etc. yet when our dessert came, nothing (and we were greeted with a ‘happy birthday’ so they were aware)
- Other upset customers: one couple just got up and left because “they had sat down for 20 minutes and no one approached them”. Another requested something from the kitchen and instead of saying it wasn’t something they had or did, they just kept them waiting.
While the food was good, everything else wasn’t worth the hassle. Paso has TONS of other places that will knock your socks off.

I highly recommend Thomas Hill Organics! The decor strikes a perfect balance between elegance and warmth, creating a delightful atmosphere.
Our waiter, Jack, provided exceptional service—his attention to our enjoyment made us feel like his top priority. He offered great suggestions and anticipated our every need.
For appetizers, we started with the beet salad with goat cheese, which was beautifully presented and had a deliciously balanced flavor—not too sweet but satisfying. The Kale Caesar salad was another excellent choice, generously portioned for sharing and a perfect start to our meal.
For my entrée, I enjoyed the blackened salmon, served over creamy grits with tender, mildly flavored braised greens. Every element was cooked to perfection and complemented each other wonderfully. I also sampled the rib chop, and it was truly the best I’ve ever had—smoky, unbelievably tender, and bursting with flavor.
We left feeling well taken care of and completely satisfied. Visiting Thomas Hill was my idea, and my friends were more than happy to express their appreciation for the fantastic recommendation!

Whenever we are in Paso, we try to dine at Thomas Hill and wine taste at J Dusi between our bike rides. We dropped in two nights before Thanksgiving without a reservation and they provided a warm welcome and seating for two. We had their delicious wild salmon, crab cakes, and the kale lemon Cesar salad (delicious little croutons). Our server, Austin, was exceptional informative of the menu and even suggested tasting the wine we ordered before committing to a full glass. Love a bit of history with signatures of the Daou brothers on their black board. Another memorable meal at Thomas Hill!

Outdoor seating was quite nice and service was friendly. I unfortunately wasn’t very impressed with the lunch fish tacos, they tasted a bit bland and it wasn’t really that much food. For the price point I was a bit disappointed.

Would’ve given it a zero if it weren’t for Ally, who relieved our first server that didn’t believe in providing good service. The host sat us in the back patio that had gas heaters next to and above our table. The problem with the top heaters were that they were on high heat causing your scalp to feel like it was on fire. Our first server was on a mission to re-invent the heater as it apparently had no way of lowering the temperature other than to turn it off. It took him a good twenty minutes to thoroughly figure out the on/off switch while we were left wondering as to when we could place our food order with two hungry kiddos. Meanwhile, the two tables next to us had dogs that loved to bark from time to time at each other, further enhancing our dining experience. Didn’t know dining with pets at this price-point of a restaurant was allowed, perhaps next time I’ll bring my Bassett Hound that would surely be a hit with dining patrons! Ally, did manage to score a nice tip from us, as she did try to salvage our dining experience. Kudos to you Ally!

As a Paso Robles local, Thomas Hill is EASILY one the best restaurants in town. Jack the server has excellent wine picks & the head chef was also super friendly. Definitely bringing friends and family here when we want to show them a great restaurant with awesome service & ambiance. Everything we order is excellent - I'm a big fan of the Mushroom Toast they do🤌
